vegetable cocktail

Carrot on a string:

Ingredients:
2 ounces Hennessy VS
1/2 oz Velvet Falernum
Splash Domaine de Canton
1 ounce carrot juice
1/4 ounce fresh lemon juice
Dash angostura bitters
Dash walnut bitters
Ginger root slice, for garnish
Ground cinnamon, for garnish
Directions: Add all ingredients except ginger root and cinnamon to a shaker with ice and shake until well chilled. Strain into a cocktail coupe or martini glass and garnish with ginger root and cinnamon.

Avo-rita:

Ingredients:
1 teaspoon celery salt
4 tablespoons kosher salt
Lime wedge
1/2 ripe avocado
1 1/2 ounces lime juice
1 1/2 ounces agave nectar
1 1/2 ounces 1800 Silver Tequila
3/4 ounce Cointreau
Directions: In a small bowl, mix salts well. Wet rim of a margarita glass with lime wedge and dip into salt mixture to coat. In a mixing glass, muddle avocado, lime juice, and agave. Add tequila and Cointreau. Top with ice and shake vigorously. Strain into ice-filled, salt-rimmed glass.

Coastal sunrise:

Ingredients:
1 1/2 parts carrot juice
1/2 part fresh orange juice
1/4 part Aperol
1 part Michael Collins Blended Irish Whiskey
Rosemary sprig, for garnish
Pinch sea salt, for garnish
Pinch fresh ground black pepper, for garnish
Directions: In a shaker, shake all ingredients except rosemary , salt, and pepper with ice. Strain into a chilled cocktail glass and garnish with rosemary, salt, and pepper.

ROASTED CHICKEN

Ingredients
  • 1 chicken whole or 4 leg quarters
  • salt and pepper
  • 4 cloves garlic
  • 2 stalks of lemongrass
  • 3 bay leaves
  • 2 stalks of celery
  • cilantro leaves
Instructions
  1. Pound the lemongrass. Make sure to get the juices out. Rub it on to the chicken. Mince the garlic and mix it together with salt and pepper. Rub it to the chicken. Slip more of the mix under the skin. You need some TLC while rubbing it under the skin, you don't want the skin to tear.
  2. Throw in some bay leaves, peppercorns, cilantro leaves and celery (or any herbs and spices to add more flavor) in a steamer. Steam the chicken for 30 minutes. Hang it to dry or for faster results pat try with paper towels. Proceed to the next step or you can put it in the fridge until you are ready to cook it. Make sure to bring the chicken out an hour before cooking.
    Now here’s where you decide what to do next:
  3. a: Submerge the chicken in a pot full of oil and deep fry it on high heat.
  4. b: Bake it at 375F in an oven, or in my case, the turbo broiler, until very crispy. When you hear the skin crackling, voila, it’s done!
  5. Either you bake it or fry it, you will enjoy a tasty, crispy fried chicken ala Max's. As I've said before have some banana ketchup and Worcestershire sauce. And if you would want to have some heat, add some hot sauce. Go ahead, mix that sauce just the way you like it and enjoy this crispy fried chicken.

BINAGOONGAN


Crispy Pork Binagoongan


When I was younger my mom and aunts cook bagoong with crispy pork on a regular basis but it does not look like the one on the photo as it contains more bagoong than pork, and that is why when this is served I usually pick on the crispy pork pieces as I love their strong sweet and salty taste and its crunchy texture.  Now that I am free to make this on my own, I will increase the amount of pork to my heart’s content.
This dish is a simple Filipino dish made out of crispy pork pieces dressed with bagoong sauce, a good dish paired with garlic fried rice.  If you want to try it out, I must warn you as the flavours of this one is so salty and strong. One small piece of pork will be more than enough for one heaping spoon of rice.  The smell will be also unpleasant for others specially for non-Asians so cook with wide open windows and doors and have your range hood in full blast.  Don’t tell me that I did not warn you.
Ingredients
500g pork belly
1/3 cup bagoong
1/4 cup white vinegar
1/4 cup brown sugar
6 cloves garlic, minced
1/2 tsp cayenne pepper
freshly ground black pepper
water
oil
Method
1. In a wok add pork pieces, 1 cup of water and 2 tbsp of oil, bring to a boil and cook until water has totally evaporated.
2. Continue to cook until the pork fat releases the oil, add the garlic and put the heat on medium.  Fry it on its own oil until brown and crispy.
3. Add 2 tbsp of water and vinegar to deglaze.
4. Add the bagoong, sugar and cayenne, cook while continuously stirring for 2 minutes.
5. Serve with lots of rice.

SISIG

Ingredients
  • 1 kilo pork, sliced into roast size
  • 10-12 pieces tofu (tokwa), cut into medium-sized cubes
  • 5 pieces medium-sized white onions, chopped
  • 1 tsp pepper, powdered
  • ¼ cup calamansi juice or ¼ cup white vinegar
  • 2-3 pieces siling labuyo, cut into small pieces (or according to how “hot” you want your sisig would be)
  • 1 small bottle of Mama Sita’s Oyster Sauce
  • 1 Maggi Magic Sarap
  • Salt to taste
  • 3-4 gloves of garlic, chopped
  • Oil for frying

Instructions
  1. Roast the pork slices until light brown. Do not over roast.
  2. Cut it in small pieces like the usual sisig-cut.
  3. While broiling the pork, you can also deep-fry the cut tokwa (I prefer to cut it to medium-sized cubes first before frying for easier procedure). Drain oil & set aside.
  4. Put the cut pork and fried tokwa in a bowl, together with the chopped onions, pepper, calamansi juice or vinegar, chilies and mix together. To experience the pleasure of cooking (for me), I’d wash my hands thoroughly and do the “mixing” with my bare hands.
  5. Heat the pan. Put minimal amount of oil. Sauté the garlic and put the mixed ingredients in the pan.
  6. Stir for a minute and season with Maggi Magic Sarap and salt.
  7. Finally, pour in the Mama Sita’s Oyster Sauce and mix them altogether. Taste & enjoy!
