BLACKBERRY SHERBET

1c, blackberry juice                                               salt little
1 2/3 c. blackberries                                              1  1/3c. water
6tbsp. lemon juice                                                  2 egg whites
METHOD... to fruit the juice ,add lemon . combine  sugar salt  and water and bring to rolling boil. add to fruit mixture cool freeze until mushy remove from freezing unit add unbeaten egg whites .beat with rotary or electric mixture until light but not melted . return  freezing trays and freeze until done serve with whole strawberries or fresh mint.
